250 g cottage cheese
2 tablespoons olive oil
2 cloves garlic (finely chopped)
1 teaspoon dried oregano
1 teaspoon salt
1/2 teaspoon freshly ground pepper
1 pinch cayenne pepper (optional)
250 g fresh tomatoes (diced)
100 ml vegetable broth
1 handful fresh basil (roughly chopped)
Instructions
Finely chop the onion and garlic. This takes about 5 minutes. Make sure they are evenly chopped for even cooking.
In a large pan, heat the olive oil over medium heat. After about 2 minutes, the oil should be hot enough to add the onions and garlic.
Add the onions and garlic to the hot oil and sauté for about 3-4 minutes, stirring occasionally, until they are soft and lightly golden. This will give the sauce an aromatic base.
Add the diced tomatoes and stir well. Let everything simmer together for about 5 minutes until the tomatoes are soft and release their juices.
Add the vegetable broth, oregano, salt, and pepper. Stir everything well and cook the mixture for another 5 minutes. Be careful not to let the sauce burn.
Gently stir in the cottage cheese into the sauce. Let the sauce simmer for another 3-5 minutes until it is heated through and reaches a creamy consistency. Stir occasionally to prevent sticking.
Add the fresh basil and remove the sauce from the heat. Let it rest for 2 minutes to allow the flavors to develop before serving over cooked pasta.
